Fismuler moves into Hotel Serras, opposite Seville Cathedral

Fismuler has opened in Seville, its fifth venue after Madrid, Barcelona, Lisbon and Andorra, on the ground floor of Hotel Serras, right on Avenida de la Constitución and opposite the Cathedral and the Giralda. The opening coincides with the tenth anniversary of a concept born in Madrid in 2016 under Familia La Ancha, the group that also runs the hotel’s food and beverage operation.
A dining room open to the city
The restaurant’s interior design, by Arquitectura Invisible, retains the brand’s hallmarks—raw timber, marble, steel and jars of ferments and macerations on display—and opens onto the avenue through large windows that frame the Cathedral. That direct relationship with the street was one of the aims of EDDEA’s refurbishment project: for the ground floor of the complex, occupied for decades by a bank branch, to become part of the life of the historic centre once again.
The building
Serras Sevilla occupies the former residence of the Marquis of Villamarta and the adjoining apartment building, designed between 1915 and 1920 by Aníbal González and José Espiau. EDDEA has brought these listed buildings together in a five-star grand luxury hotel with 43 rooms, including three suites and two junior suites, an inner courtyard and the Almagra rooftop, with views of the Giralda.
The menu pairs house classics, such as the escalope San Román with egg and truffle or the cheesecake, with stews created for Seville, among them a remojón with smoked trout and orange.
